Piña Colada Party

Pina Colada with Molokai Coconut Bai

You know you want to join in on this Friday’s National Piña Colada Day festivities. Whether it’s for a party of 1 or of many, here are some recipes for you to bust out. In our minds, it’s Piña Colada Day everyday. But we’ll never turn down an excuse to celebrate.

 

Perfectly Skinny Piña Colada

Don’t let calories be party poopers. This version of a Piña Colada has about half the cals of a typical PC, ringing in at under 250.

Serves 1

  • ½ bottle Molokai Coconut
  • ½ cup Frozen pineapple chunks
  • 1 Frozen banana
  • 1.5 oz Rum
  • ¼ tsp Coconut extract
  • ½ tsp Vanilla extract

Directions

Blend above ingredients and pour into a glass.

  • Optional: Add almond milk to achieve desired consistency if necessary. Decorate with shredded coconut around the rim if you’re feeling festive.

 

Boozy Piña Colada Float

Serves 1

  • 1 Frozen banana
  • ½ cup Waikiki Coconut
  • ½ cup Peru Pineapple
  • 1.5 oz Rum
  • Mango sorbet

Directions

Blend the first 4 ingredients and pour into a glass. Then top with a generous scoop of mango sorbet.

  • Optional: Finish with a bit of grenadine and a cherry for a beautiful sunset in a glass

 

Sweet & Spicy Piña Colada Salsa

Serves 4-6

  • 1 mango, diced
  • 1 pineapple, diced
  • ½ red onion, diced
  • 1 fresh jalapeno, seeded, minced
  • 1 avocado, diced
  • 3 tbsp minced cilantro
  • ¾ cup fresh corn
  • Molokai Coconut

Directions

Combine all solid ingredients. Add just enough Molokai Coconut to coat everything. Mix well and cover. Allow the flavors to marry in the fridge overnight for best results.

  • TIP: Use a mango that is slightly underripe- a mango that’s just on the harder side works best for fresh salsas. Also, retain the seeds and veins of the jalapeño for a nice kick in the mouthpants.

 

Piña Colada Cream Pie Shake

Serves 1

  • ¾ cup Molokai Coconut
  • ¼ cup Peru Pineapple
  • 1 Frozen banana
  • 1 full graham cracker sheet
  • ¾ cup Vanilla ice cream

Directions

Blend above ingredients and pour into a glass.

TIP: blend the banana, graham cracker, and Bubbles first. Once smooth consistency is achieved, add in the ice cream. Your blender will thank you.

  • Optional (but strongly suggested): Top with whipped cream, shredded coconut, a cherry, and cinnamon. And a pat on the back.
