Grab your gals because we’ve got the recipes to make this a Galentines Day to remember…or not, depending on how big your pitcher of pomegranate cocktails turns out to be.

 

Pomegranate Punch

Galentine's Day Brunch Cocktails and Ipanema Pomegranate

They say that Cupid carries a bow and arrow, but we wish he’d mix it up and start flying around with a pitcher of these pomegranate cocktails.

Ingredients

  • 2 bottles Bai Ipanema Pomegranate
  • 2 cups Vodka
  • 2 cups Ginger Beer
  • 2 cups Fresh grapefruit juice
  • Ice
  • Sprig of Rosemary
  • 1 cup Pomegranate seeds

Directions

Add vodka, Ipanema Pomegranate, ginger beer and fresh grapefruit juice to a pitcher and stir. Pour into individual glasses over ice and garnish with a rosemary sprig and pomegranate seeds.

 

Pomegranate Hummus

This crazy concoction is the romance of the century. Sure pomegranates and hummus don’t sound like they should be on pita at the same time, but trust us. This love story would make Romeo and Juliet jealous.

Ingredients

  • 1/8 cup Bai Ipanema Pomegranate
  • ¼ cup Tahini
  • 1/8 cup Lemon juice (about one lemon)
  • ½ clove Garlic
  • 2 tbsp Olive oil
  • ¼ tsp Salt
  • 1 14oz can of Chickpeas
  • 1 tsp of Paprika
  • Pomegranate seeds

Directions

Rinse and drain the chickpeas. Add tahini, lemon juice and Ipanema Pomegranate to the bowl of your food processor. Pulse for about 1 minute, scraping the edges with a spatula as needed. Add garlic, olive oil, and salt. Pulse again until smooth. Add chickpeas. Pulse until you reach the desired consistency, adding a little bit more of Ipanema Pomegranate as needed. Top with pomegranate seeds.
