We may be moving in the direction of shorter days and longer nights, but summer is still very much alive. And that means two things: 1) It’s still really dang hot out 2) It’s not time to put your summer bod into hibernation mode… yet. But don’t sweat (well, not more than you already are)- we wouldn’t dare bring issues to light unless we had their solutions. So grab some popsicle sticks and some spoons, because these low-cal versions of your favorite treats are your dog day defeaters.

Ever notice how well cherries and raspberries go together? We harnessed the deep sweet tartness of both and put them up against the brightness of a lime to give you our version of the classic summer drink.

Makes 6 pops

  • 1 can Bolivia Black Cherry
  • ½ cup full fat coconut milk or coconut cream
  • 2 frozen bananas
  • 1 cup frozen Raspberries, divided
  • Juice and zest of 1 lime
  • Optional: sweetener of choice

Directions

Combine Bolivia Black Cherry, coconut milk/cream, frozen bananas, ½ cup frozen raspberries and lime juice and zest in a blender until smooth. Pulse in remaining raspberries until evenly incorporated. Pour in popsicle molds and keep in freezer until ready to enjoy.

Zingy Dragonfruit Sherbet

Zingy Dragonfruit Sorbet- Low Cal Summer Treats- Bai

Inspired by the parents of Sumatra Dragonfruit (flavor-breathing dragons, obviously), we’ve come up with a sherbert (aka ‘nice cream’) with a little heat of its own. A little sweet, a little spice. Ahh, so nice.

Serves 2

  • ½ cup Sumatra Dragonfruit
  • 2 frozen bananas
  • Zest of 1 lemon
  • ½ cup crystallized ginger, more for garnish
  • Optional: sweetener of choice

Directions

Combine Sumatra Dragonfruit, bananas, and lemon zest in a food processor until smooth. Sweeten if desired. Roughly chop the crystallized ginger and pulse into mixture until incorporated. Enjoy as ‘soft-serve’ or place in the freezer, stirring every 30 minutes until desired hardness. Serve with a garnish of crystallized ginger.

Creamy Coconut Popsicles with a Chocolate Shell

Remember that chocolate dip you used to get on your soft serve as a kid? The key to a healthified one is super simple: coconut oil. Seems to us that coconuts are always the answer. No matter the question.

Creamy Coconut Chocolate Pops- Low Cal Treats

Makes 6 Pops

  • 2 cups Molokai Coconut
  • 1 cup full fat coconut milk or coconut cream
  • 2 frozen bananas
  • ¼ cup unsweetened shredded coconut, plus extra for sprinkling
  • 1 cup chocolate chips (dark or semisweet)
  • 2 tbsp coconut oil
  • Optional: sweetener of choice

Creamy Coconut Chocolate Pops- Low Cal Treats

Directions

Blend Molokai Coconut, coconut milk/cream, and frozen bananas until smooth. Sweeten if desired. Pulse in shredded coconut to retain texture, pour mixture into popsicle molds, and freeze. After about 45 minutes in the freezer, sprinkle extra shredded coconut around the base of the pops if desired. Once frozen, prepare chocolate shell by melting chocolate chips and coconut oil together (either on double boiler or in microwave at 20 second intervals, stirring in between). Drizzle, dip, or decorate the pops as you please, and keep in the freezer until serving.
