Mo’ Mojitos, Please

Pineapple Ginger Mojito

We clearly can’t resist a cocktoliday. Saturday, July 11th is National Mojito Day, so we got creative in the kitchen to bring you some fun (and even lighter on the calories than your typical mojito!) recipes to try. Minty fresh.

Peachberry Sunset Mojitos

Peachberry Sunset Mojito

Serves 4-6

  • 1 bottle Panama Peach, divided
  • 1 cup rum, divided
  • Juice of 3 limes, divided
  • 1 cup mint, loosely packed, divided
  • 2 cups frozen ripe strawberries
  • 2 cups frozen ripe peaches

Peachberry Sunset Mojito

Directions:

Blend ½ bottle of Panama Peach with ½ rum, ½ lime juice, ½ mint leaves, and frozen strawberries until smooth. Pour halfway up each glass. Blend all remaining ingredients, and pour into each glass on top of strawberry mixture.

Pineapple Ginger Mojitos

Pineapple Ginger Mojito

Serves 4-6

  • 1 can Peru Pineapple, divided
  • 1 cup rum, divided
  • Juice of 3 limes, divided
  • 1-2 cups pineapple chunks, fresh or frozen
  • Ginger syrup to taste
  • 1 cup loosely packed mint leaves, divided
  • 1 cup club soda

Pineapple Ginger Mojito

Directions:

Blend half of the can of Peru Pineapple, rum, and lime juice with the pineapple chunks. Add ginger syrup to taste and blend again. Pulse in half of the mint leaves until coarsely chopped. Pour mixture into the bottom of each glass. Separately mix remaining rum, Peru Pineapple, lime juice, and mint leaves (muddled or coarsely chopped). Pour this mixture on top of blended pineapple mixture. Top with club soda.

Homemade Ginger Syrup

  • 2 cups water
  • 4 ounces (112g) fresh ginger, unpeeled
  • 1 cup (200g) sugar

Directions:

Slice ginger into rounds and then coarsely chop, with skin on. Add to saucepan with water and sugar. Bring to a boil and then reduce to a simmer for 45 minutes-1 hour. Strain ginger pieces out of syrup, and keep the extra in the fridge! Use brown sugar for a richer, spicier flavor.

Clementine Mojitos

Clementine Mojito

Serves 4-6

  • 1 cup loosely packed mint
  • 1 bottle Costa Rica Clementine
  • 1 cup Rum
  • 3 limes, juiced
  • 1 cup club soda
  • 1 clementine, sliced

Clementine Mojito

Directions:

Muddle or coarsely chop mint leaves to release their oils. Combine Costa Rica Clementine, rum, and lime juice with mint leaves and stir. Fill each glass ¾ of the way up with this mixture and top with club soda. Serve with fresh clementine slices.
